An ancient sheeps milk cheese from Castile-Leon, Zamorano is made from the raw milk of the regions Churra and Castellano sheep. This D.O. cheeses name comes from the namesake town in the center of the region of production. The flavor is s weet and tangy, with an underlying nuttiness. Ours is aged for 6 months.
